A SIMPLE recipe for herb chicken?
I’m kind of new to cooking, and my head is spinning. All I want is a quick, simple recipe for herb chicken. I’d like to use breasts and/or legs instead of a whole chicken. I’ve gathered that oregano and rosemary are good herbs to use. What kind of flavor does poultry seasoning give? And how much of these seasonings should I use? Could I use the oregano and rosemary to make a herb butter rub? Could I also use them to make herb mashed potatoes? I would prefer to bake the chicken; how long and at what temperature should I bake it?

Herb Oven-Fried Chicken
3/4 cup bread crumbs, seasoned dried
1 tsp oregano leaves
1 dash each salt/pepper
1 garlic powder, dash
1 1/4 lb chicken, breast 1 strips
In small bowl combine crumbs and seasonings; dip chicken strips in
water, then into crumb mixture, pressing crumbs to make sure they
adhere and chicken is thoroughly coated. Spray a nonstick baking
sheet with nonstick cooking spray; arrange chicken on sheet and
sprinkle evenly with any remaining crumb mixture. Bake @ 350 degrees
until tender, about 20 minutes.
Herb Chicken Bake
2 cups sour cream
1 teaspoon dried leaf tarragon
1 teaspoon dried leaf thyme
1 teaspoon salt
1 teaspoon paprika
1/8 teaspoon garlic powder
6 to 8 chicken breast halves
1 cup corn flake crumbs
In a bowl combine sour cream with the herbs and seasonings. Dip chicken into sour cream mixture, then roll in the crumbs. Place chicken breasts, skin side down, in a greased 13×9-inch baking pan. Bake at 350° for 35 minutes. Turn and bake 15 to 20 minutes longer, until chicken is tender and juices run clear. Boneless chicken breasts will take less time. Serves 6 to 8.
Here’s an easy one…one cup rice; 2 cups water in an 8″ baking dish with tsp salt and 1/2 stick of butter cut in pats and laid around on top. Lay 2 large breasts or 4 thighs on top;
salt n pepper; Herbs de Province (get it at any grocery store in spices) add a few more pats of butter. cover in foil and bake appx. 40 minutes. uncover n bake 15-20 more minutes.
