after researching i couldn’t find the answers… ?
what does sugar, butter, egg, cinnamon, nutmeg, cloves and allspice do in muffins. what’s their nutrients etc.
and in biscuits what does these ingredients do?
flour – i have an idea that it creates the body of the biscuit. . .
baking powder, butter/shortening, and milk

cinnamon, nutmeg, cloves and allspice are spices. They are used for flavor. I don’t think they really have any appreciable nutrients- you use so little you don’t get any noticeable vitamins from them.
Egg is a binder- it holds the muffins together.
sugar is used as sweetener
butter is used to keep the food moist and prevents it from being too chewy I think, also the oil sort of traps the flavors from spices so food is more flavorful. Its used more for texture and moisture though really.
Baking powder is a leavening agent- it makes biscuits fluffy, if you don’t use it they are hard and lump like. Butter/shortening is used to make them moist and also flaky because when you make biscuits you use cold butter. The butter melts as the biscuits cooks and sort of creates little air pockets between the layers of dough. Milk- used for moisture. You can also use water, I guess milk might have more flavor/richness but I’m not sure.
For the nutrients- google the ingredient then ‘nutritional value’ or something like that.
