Can you substitute fresh mint leaves for peppermint extract?
I have an ice cream recipe that calls for 1 1/2 teaspoons peppermint extract but all i have is real mint leaves.

that would work. you could boil them in a little sugar water, strain, and add it to the ice cream mixture.

Ooohh…I would use fresh mint anyways…sound yummy! Just chop up about 2 tablespoons and add it. Different flavor, yes a bit, but still minty!
YES you can just chop them them fine and add them to the ice cream and if you have any mint liquor add a bit of that too or some peppermint extract too. just a little to BAM it up a bit.
I think it would be very nice. Cut into chiffonades.
