Hi,
I can only find recipes for hedgehog or chocolate hedgehog, do you know where I could find one for peppermint hedgehog? Or if you know of one yourselves?

Carob Peppermint Hedgehog Balls
Ingredients:
1 cup pitted dates
1 cup organic raisins
1 cup raw almonds
2 cups rolled oats
1 cup shredded coconut
2 tablespoons raw carob
2 teaspoons vanilla extract
1/2 teaspoon peppermint extract
2 tablespoons raw honey
Directions:
Place dates and raisins in food processor and blend into small pieces. Add the almonds, oats, coconut, and carob powder. Blend until the mixture resembles bread crumbs. Add the extracts and honey. Stop the machine, and check if the texture is correct by taking a small amount into the palm of your hand and roll into a ball. If the mixture does not bind, add extra honey or some apple juice.
Hedgehog Cookies
2 cups walnuts
1 cup pitted dates
1 cup brown sugar
2 cups coconut, divided
2 eggs, slightly beaten
Preheat oven to 350 degrees F. Grease cookie sheets.
Grind walnuts and dates in food chopper or food processor. Add sugar, 1 cup of the coconut and eggs. Mix well. Shape into rolls about 1 inch long and 1/2 inch in diameter. Roll each cookie in remaining coconut. Place on prepared cookie sheets and bake for 15 minutes.
Makes about 5 dozen.
I would just add some peppermint flavoring to this recipe (or your chocolate one) and call it a day!
