I have never made mustard before, mainly because it is so easy to just go buy it at the grocery store. Maybe you can try these suggestions...

Mustard with herbs, basic recipe. 1/2 cup dry mustard. 2 tbs flour -- 2 tsp salt -- 2 tbs sugar-- 2 tsp fresh herbs or 1/2 tsp dried herbs. Blend dry ingredients, gradually add vinegar until a smooth paste is made. Allow to sit over night. bottle or place in small jars, store in the refrigerator. All mustards improve with age.

Basic mustard. 1 cup dry mustard. 1 cup vinegar(herb or flavored) 3 tbs water. 2tbs honey or 3 tbs sugar. 1 tsp salt. Combine mustard with liquids, let sit for 4 hours, stirring occasionally. Add rest of ingredients. put into a double boiler over simmering water. Cook for 10 minutes, or until mustard thickens. Pour into sterilized jars, store in the refrigerator, allow to sit for a few days for flavor to develop

English pub Mustard. 1 cup dry mustard. 2/3 cup dark beer. 1/2 cup brown sugar. 1 tsp salt. 1/2 tsp turmeric. Mix dry ingredients in a glass bowl. Stir in beer. Either heat mixture on the stove till it reaches a near boil, or microwave for 2-3 minutes till it reaches a near boil. pour into jars. Let sit for a week to season.
