Does anyone out there have a good traditional Hot Chili recipe, w/ a detailed list of spices and ingredients?
PLEASE do NOT give recipes using prepackaged spices, etc., as I might not be able to find them. I need a detailed spices and ingredients list, even more than the cooking directions themselves.

onions, green peppers, jalapeno peppers, celery salt, black pepper, cumin,garlic, hamburger,kidney beans,crushed tomatoes, pasta sauce, chili powder and chili sauce. Cook all the first ingredients including the hamburger until onions and peppers are done. Then add everything from the kidney beans on into the pot and simmer for about an hour stirring so it doesn’t cook onto the bottom of the pan. This is not a burning hot chili but a nice medium spicey one. The more hot peppers you add the more it will burn.
Got to Allrecipes.com and look for Washabinaros Chili, it’s the best recipes for depth of flavor and I gt rave reviews when I make it. I leave out the wasabi since It’s not convenient to get. The directions in this recipe are important though as to let the flavors intensify.
Chili Powder~ 2 tablespoon cumin seeds
or 2 tablespoons ground cumin
4 dried hot chili peppers ground
or 2 teaspoons crushed red pepper flakes
2 teaspoons dried oregano
2 teaspoons garlic powder
2 teaspoons onion powder
1 teaspoon ground allspice
1/8 teaspoon ground cloves
combine all teh ingredients in a blender or electric grinder, and grind until the mixture is a coarse powder. Store sealed in an air tight glass jar in the refrigerator.
Secret if you are using dried hot chili peppers, remove seeds before grinding.
3 tbsp. butter
1 large onion, minced
2 cloves garlic, minced
1 lb. chopped beef ( not hamburger) shredded tri tip
3 cups water
1 1/3 cup canned tomatoes
1 green pepper, minced
1/2 tsp. celery seed
1/4 tsp. cayenne
1 tsp crushed cumin seed
1 small bay leaf
2 Tbsp. chili powder (as above)
1/8 tsp basil
1 1/2 tsp salt
The day before your going to make this. You want to buy and cook your tri tip. Shred and set aside for cooking in Chili.
Heat butter, saute onion and garlic. Add meat and brown.
Move meat to saucepan. Add remaining ingredients and bring to a boil, then simmer, uncovered, for approximately 3 hours.
Variations: add canned kidney and or red beans during last hour of cooking. Reduce cayenne and chili powder by 1/2 for a less spicy version…..
