homemade pimento cheese spread?



Most of you Yankees won’t know what I’m talkin about..lol
I’d like a recipe for homemade pimento cheese…I have velveeta (somehow I ended up with 3 blocks of it !) It have been on sale…And I also have an 8 ounce block of colby, I don’t want to go to the store ! And a 5 ounce jar of pimento (in a lot of liquid)…Anything else that’s necessary for seasoning or whatever, I probably already have…The predominant ingredient HAS to be the Velveeta and the measurements don’t have to be exact becuase I don’t usually follow recipes exactly anyway…Thanks a bunch in advance and the best answer will be the one I try !

1 lb Velveeta cheese
1-2 jar pimiento
2 tablespoons salad dressing (I use Miracle Whip)
2 tablespoons sugar
2 tablespoons vinegar

Grind or mash Velveeta and pimiento. Add other ingredients and mix well.

Blech, velveeta. That is not a proper southern pimiento cheese. Well, since that’s all you have, I guess it’ll have to make do.

You don’t have nearly enough pimiento for that much cheese, by the way. You’re basically going to end up with a velveeta and mayonnaise salad.

Grate up the , er “cheese” (just for future reference, and if you want to make this again properly- I use sharp cheddar.) Mix it up in a bowl with Hellmann’s mayonnaise. The brand is important. Hellmann’s is Real Mayonnaise. Kraft and other kinds are usually “lite,” which is silly since it’s made with eggs and oil. Anyway, add salt and plenty, plenty of freshly ground black pepper. Drain and add the pimientos. That’s it. I like to let it refrigerate overnight so the pimiento flavor gets all through.

Here are a variety of recipes for it…. I use to love it when I was a girl….. guess I will have to make some too now!! My grandfather was from New Orleans….. that is why I am familiar with it.

Why Velveeta? It is processed cheese.

1 bag of grated sharp cheddar
1 bag of grated montery jack
1 block of cream cheese
4 tbsp. mayonnaise
1 medium sized jar of pimentos
Salt and pepper to taste

Blend the cheeses and cream cheese at room temperature until creamy. Blend it if you like it smooth. Add the diced pimento and salt and pepper and mix well.

Very easy and you can experiment with different flavors with the cheeses. I like a Chipotle and smoked pimento cheese spread. You can even add a little hot sauce to it and make it unique.

If you are going to make it make it with real cheese.
