How do you cut ginger root?
I have a recipe that calls for 6 slices of ginger root. Do I peel it, then cut the slices about a 1/4 inch thick?

You have answered your own question. Actually, when peeling and grating ginger you do not even have to peel it. I was in a cookery class one night and a a lady from Thailand was teaching that night and she said that it was unnecessary to peel. Either way, it does not matter.
If the recipe is calling for slices, then cut them into sizes about the size of a quarter. Most people do peel the ginger. I use a vegetable peeler, though I’ve seen chefs use the back of a spoon to peel it.
I always cut it first and then peel it with a paring knife, although I have seen it done the other way.
