How much fresh basil and oregano should I use to replace 1 Tablespoon each of the dried stuff?
I have a great recipe for spaghetti sauce, and I am hoping to make it this coming week. It calls for 1 T. of dried basil, and 1 T. of dried oregano. If I want to use fresh herbs, what amount should I use, and do I need to do anything special to prepare it?

You should use 2 to 3 times more fresh than dried because dried herbs flavours have concentrated during the drying process, and although aren’t nearly as nice and fresh tasting you don’t need nearly as much. As for using your fresh herbs, all you have to do it give them a wash, chop them up and toss them in your sauce. You can put them in more toward the end of cooking though as they will taste much fresher that way.
Season to taste. The fresh will have a different flavor than the dried. You’ll really enjoy the difference. Use a very fine sharp knife to unleash the flavors of the fresh herbs. Yummy!!
If it calls for a tsp. of dried I would try 1 1/2 fresh. Then I would start tasting and keep adding till I liked the flavor.
go with double and taste it then add a little more if you think it needs it
