How to cook chilli to maximise the heat/spice?



Is there a good way to cook chilli. I heard frying it makes the red chilli’s loose their heat/spice. I also heard long stewing times also reduce the heat. I would like to make some really hot/spicy chilli dishes.

once you add the spices and bring to a soft boil,lower heat simmer for a couple hours.the flavors will meld not reduce

Maximise your chilli usage, then a long simmer. After that , if possible, let it sit in the refrigerator overnight. Then reheat the next day and stir in some extra cayenne.

once the spices are in, they’re in. They will not reduce in flavor or strength no matter what you do. just make it according to recipe and add more spice if you like it hotter.

If anything, leaving chillies in longer increases the amount of heat/spice bececause they have time to permeate the rest of the food.

So if you’re frying them, toss them into the oil first so that the oil catches the heat and then add the rest of whatever you’re frying.

If you’re making a stew/soup, put the chillies in and then simmer them to increase the heat.

Maximizing the heat/spice depends on the type of pepper used, jalapeno, haberno etc., garlic onion ans salt in moderation and cilantro, basil and cayenne to heat it up. If I could speak spanish I would get my neighbors recipe which is so hot water makes it hotter
