How to I make the traditional Taiwanese Ginger Duck hotpot?
In Taiwan they have a lovely hotpot style dish in speciality restaurants called Ginger Duck. Basically it is duck boiled in rice wine with ginger but I would like a specific recipe please? The more traditional the better.

add 2 cups of rice wine
then add a few slices of ginger
add soy sauce
add other ingredients
boil the duck for 2 hours
skim the duck with the broth
ready to serve

you are looking for 薑母鴨 recipe, there seem to be several variations, mainly some recipes ask for specific dried Chinese herbs to be added. They have pre-made packages in markets depending on where you live. If you live near a Chinatown try asking for it.
Without the herbs though–
heat sesame oil(if you can find “dark” sesame oil) in wok/pan, then put in ginger slices (more than just several, you need quite a handful).
When browned, add duck meat (from one duck), then add rice wine (about a bottle). You might need to add a little water too to cover the meat. Some people add “ginger juice” (simply extracted from ginger) here to intensify the flavor. A little salt is ok depending on how salty you want it. Boil then turn down heat.
Cook for an hour or until the meat is tender.
