How to mellow the onion flavor in my soup?



The onion I put in my chicken noodle soup is a lot stronger than i thought, the soup tastes like onion soup! Any ideas????

Try using green onions… Or be sure to add the onions as the first step.

When making home madec hicken noodle, I simmer 1 SMALL chopped onion (a little onion goes a long way), 1 whole chicken, parsley and 8 cups of water for about 2 hours. By then the onion practically evaporates in the water. When you add the veggies and pasta, it will cover the strong onion flavor.

Also, adding a clove of garlic can tame the onion flavor and add an extra level of savouryness to the soup.

I have two thoughts, the first would be to buy a milder onion, some onions are really strong, if you look for shallots they tend to be milder and sweeter, also the giant spanish onions tend to be milder. The second thought is, did you cook the onions first, either in the soup pan until they were transparent, or if you want ot be quick, you can soften them in the microwave, chopped with a couple of tablespoons of water for 2 minutes, then drain and add. Raw onion is a lot stronger than cooked. Hope this helps x

Peel one potato and add it whole to the soup for about and hour.

Just let the soup simmer for a bit longer. The onions are aromatic so the strong flavor should mellow with time. If you pre cook the onions longer next time, they will sweeten.

Also chop up some celery very fine, cook it, and add it in. It will help balance the onion. Sage is also great for chicken soup.

You can also take some broth and puree a carrot then put it into the soup. lots and lots of options.
