I am looking for a recipe for red and yellow pepper coolie?
it is a sauce, italian I think. I had it at an italian restrant. the decrption was this “seared scallops and aspagus drizzled with a red and yellow pepper coolie”.

try searching for coulis instead. It sounds good, I’ve made something similar with a sweet balsamic sauce in place of the coulis. My chef friend serves it over butternut squash puree
Here is one. Just substitute one yellow pepper for one of the red ones…
INGREDIENTS
1 tablespoon olive oil
2 red bell peppers, seeded and chopped
2 shallots, chopped
1/2 cup white wine
1/2 cup chicken broth
1/2 cup sour cream
DIRECTIONS
Heat olive oil in a skillet over medium heat. Add red bell peppers and shallots; saute until soft. Stir in white wine and chicken broth, and simmer over low heat until reduced by half.
When the mixture is reduced, stir in sour cream, and transfer the mixture to a blender. Puree until smooth. Reheat before serving if necessary.

Bert C has a good one, so I’ll only add using a squeeze bottle to make application to the plate easier. You can also use it to create designs on your plate, and combine it with different flavor/colored coulis. Just make sure the coulis you’re using complements the food your serving…Have fun.
