I have a recipe for mint chutney, what should I use to process the ingredients?



I basically need to pulverize/grind mint leaves, coriander leaves, an apple and various spices + lemon juice, etc. I have to get it to the consistency of a thick paste. Our food processor(s) seem only capable of getting to “very small chunks” – looks like mowed grass. Any suggestions as to what sort of device I need to buy? Thanks.

A mortar and pestle. The larger, Mexican ones are called molcajetes and are good for large quantities of food.

EDIT: Pronounce that MOLE kuh HAY tay. Mexican, Latin and Spanish groceries generally have them, but you can order them online. I like them better because they’re bigger so are more useful. I use mine for salsas and guacamole, as well as spice and herb grinds.

A blender will do it if the mix is liquid enough. If it is not just get choppin with your favorite knife…

Well, you can either get a mortar or pestle to finely grind these properly by hand (hand meshing releases flavors better) then beating them up in a food processor, but you might also want to consider adding more liquid into your mix to help it pulverize better. And, don’t be afraid to let the processor run until you get the consistency that you need, it might take some time for all that you have in there. My 5 speed food processor is a bit intense because I use it all the time, but you can use yours just the same, just let it run a bit longer. Chutney is supposed to be a little chunky anyways. depending on what type of food processor that you have i have one that i paid over a hundred for like what emaril live useds on tv and i love it i ordered it through the food network over a year ago. i hope that helps u and that u get something that will help.

Dr. Jones: IMHO there is no need for you to buy a new device for your kitchen to get this job done. Get the ingredients you need to pulverize/grind in a blender that has various speeds. Nothing like a blender to get the job done!. You mentioned your food processor left you with small chunks, the blender will leave you with finer results especially if you use the “pulse” mode. If you are still not happy with the consistency of your chutney, I will then suggest you use a mortar like the other friends suggested to you. Finishing the blender´s job by hand will let YOU control the quality of the paste you are after. If you don´t have a mortar and want to buy one, you will be amazed to find a good one, in the decorative isle of any green house or nursery. It has to be made of stone though to get the job nicely done, cement imitations won´t do. I have a little one made of lava rock that can be used as decoration as well when not in use. Quite a piece of conversation in the kitchen! But again, try your food processor or the blender again or both combined, and if you are not happy with the result, finish the job by hand so you can control it more closely. If you do it the other way around , meaning by hand first then the blender you might not get the results you are after.The blender´s propeller turns a lot faster and chops in a finer way than the food processor, try to work with both, until you get what you want, no need to invest in a third device. You have everything you need for your mission, right there at home. Hope this is useful.

Just take a blender. It will make it properly.

Well u haven;t asked for the recipe but i am still giving you proper mint chuttney recipe that is made IN RESTAURANTS too.

take mint leaves. wash them..
take 5-6 onions,
chop them.
put mint leaves in the grinder. grind it for a minute. , put chopped onions in it.
grind them properly.,make a paste,
put lemon juice 3-4 tsp, salt acc to taste, red powder chillie lil bit, green chillie, lil ginger, lil garlic.again grind them properly.. and put little water in between to make the mint chutney paste in a balanced mixture. taste it, if u feel something is less, put more and grind it again..
