I’m making a mexican casserole and noticed I was out of yellow onion. Can I saute green onion with my beef?
I have green onion. Can I substitue this for the yellow onion? Should I saute it with my beef or add it to the casserole right before I bake it?

yes it will work fine
Add it to the casserole before baking. Green onion looses flavor when it cooks.
sure. i would saute it with the beef and then maybe save a little for on top when it’s done.

I wouldn’t add it to the casserole at all. Green onions lose all their flavor and texture if they are cooked. I suggest using onion powder for flavor and then sprinkling raw green onions on the finished product right before serving.
Green onions lose flavor when cooked, but a lot of Mexican dishes are made with them. I would put it on as a garnish after the casserole is cooked. The only time I cook green onion is on the grill when I make carne asada.
Add it to the casserole as it is too fragile to fry.
Add enough and enjoy.

it will work fine. i use green onions in a lot of my recipes.
