I’m making gluten-free rice pudding for a man who cannot have gluten, but I’m not sure how allergic he is to it. I didn’t even know vanilla extract had gluten!

Only pure vanilla extract contains gluten, use artificial instead, it’s cheaper, and there really is not a lot of difference in terms of taste.
McCormick Spices is good about labeling their products so I would check them first. According to their web-site, their pure vanilla extract is gluten-free. If a product contains gluten, they will state it in bold letters.
Since some grocery stores are getting about labeling the products they manufacture, I would check Wegmans or Wal-Marts regular products before I spent extra money on specialty products. I would not just use what you have unless you can confirm it is gluten-free.
