Making applesauce– recipes?
I have one ten gallon pot(all sweet apples) with allspice, honey and cinnamon for flavor. The other ten gallon pot has sour apples with cinnamon, honey and a few spearmint sprigs in it. they’re boiling now. Wicked yummy. Any suggestions for the next batch? I have lotsa apple trees, all producers, and would like ideas.

I add red cinnamon candies to some batches and we eat that with Pork roast. ??
If you can, though, the most ‘useable’ thing to do is to core, peel and slice into slices and can them whole. Can be used in pie, upsidedown cake (just like pineapple upside down but use the apple slices), cobbler, drained and stirred into hot cereal, etc.
We also use apples in with the stronger berry jams – like blackberry, raspberry, boysenberry etc to extend and it just made the flavor of the jam a little bit milder.
We have an apple press, too, and usually can about 50 qts of apple juice, it is very old – my parents got it from our grandparents in the 60s.. Still works like a champ.
Yes my suggestion is that you better have a couple of cases of mason jars to preserve what you’ve made already.
How about making some dried apples.
Applesauce Recipe

Preparation time: 45 minutes.
Ingredients
3 to 4 lbs of peeled, cored, and quartered apples. We use granny smith, fuji, or gravenstein apples, or a combination of all three. (Make sure you use a good cooking apple.)
4 strips of lemon peel – use a vegetable peeler to strip 4 lengths
Juice of one lemon
3 inches of cinnamon stick
1/4 cup of dark brown sugar
up to 1/2 cup of white sugar
1 cup of water
1/2 teaspoon of salt
Method
1 Put all ingredients into a large pot. Cover. Bring to boil. Lower heat and simmer for 20-30 minutes.
2 Remove from heat. Remove cinnamon sticks and lemon peels. Mash with potato masher.
Ready to serve, either hot or refrigerated. Delicious with vanilla ice cream or vanilla yogurt.
Freezes easily, lasts up to one year in a cold freezer.

Applesauce Recipe
Most applesauce recipes call for boiling the apples. But in this applesauce recipe, the apples are roasted. It brings out the apples’ natural sugars, caramelizing them as they cook. This apple sauce only needs a touch of honey to make it sweet and delicious.
Prep Time: 10 minutes
Cook Time: 25 minutes
Ingredients:
8-10 Granny Smith, Rome Beauty or Jonagold apples
1 Tbsp. olive oil
1 Tbsp. honey
1/2 tsp. cinnamon
1/4 tsp. cloves
1/4 tsp. salt
Preparation:
Preheat oven to 425 degrees F.
Peel and dice apples into 1-inch pieces. The more uniform the apple pieces are, the more evenly they’ll cook.
Toss apples with remaining ingredients. Spread out in an even layer on a sturdy baking sheet or shallow roasting pan.
Roast 10 minutes. Stir. Roast another 5-15 minutes until apples are soft enough to mash lightly.
Scrape apples into a dish, mashing lightly. Leave some chunks, if desired.
Garnish with a sprinkle of cinnamon.

10 Minute Apple Sauce
* 3 Golden Delicious apples, peeled, cored, and quartered
* 3 Fuji apples, peeled, cored, and quartered
* 1 cup unfiltered apple juice
* 2 tablespoons cognac or brandy
* 2 tablespoons butter
* 3 tablespoons honey
* 1/2 teaspoon ground cinnamon
In a sealable microwave-safe container, combine apples with all other ingredients. Close lid, leaving one corner of lid open to allow steam to escape. Microwave on high for 10 minutes.
Using a hand blender or potato masher, blend to desired consistency. Serve hot immediately or chill for later use.
9 or 10 medium cooking apples, peeled, cored, cut into quarters (3 lb)
1/4 cup orange juice
2 teaspoons vanilla
2 teaspoons ground cinnamon
1/4 cup low-fat sugar-free frozen yogurt, if desired
1. In a large saucepot, combine the apples, orange juice, vanilla and cinnamon. Cover and simmer about 30 minutes or until apples are tender, stirring occasionally.
2. Mash apples using potato ricer or masher until smooth. Top each serving with a heaping teaspoon of frozen yogurt.
