Substitute for spring onion and mint?



I’m going to attempt (key word: attempt!) to make a Greek spinach pie. The recipe calls for spring onions. As I can’t find these in my local grocery store, can I substitute something for spring onions?

It also calls for mint–I have some dill and don’t want to buy another herb. Can I substitute the mint with that?

Can I substitute scallions for the spring onions?
Do I have to use real butter for the phyllo dough or could I choose something like Smart Balance?

you can use leeks, but spring onions are also called green onions.. long green stems with white bulbs..

I make this all the time, and never use mint. Dill is the best in it and add good crumbled feta.

another tip… if you use filo dough.. butter each layer of it, but make sure your butter is clarified.. that means cooking it and spooning out all of the white foam.. like separating curds from way..

if you dont do that the filo will taste very bitter. its a very simple process.

in fact i made spanakopita last night!

spring onions are, in some places, also known as green onions. if you can’t find either i would be inclined to just use a bit of onion cut very finely. not sure about scallions. as to the mint why not try dried mint or leave it out. mind you i personally like the idea of dill or for that matter any other herbs like basil, coriander, parsley etc.

have fun, you will have a lovely pie whichever you choose.

Chives would be closer, but any member of the onion family will do.
Dill is fairly strong & will change the flavour compared to mint.
