5 Steak Rubs for Grilling
1-chile-cumin spice rub
3 dried chipotle peppers, stemmed,seeded,chopped
2 dried ancho chiles, stemmed,seeded,chopped
1 tablespoon ground cumin
1 tablespoon salt
2 teaspoons sugar
2-cocoa cumin allspice rub
1 tablespoon unsweetened cocoa
4 teaspoons ground cumin

3- tarragon mustard seed rub
3 tablespoons dried tarragon
2 tablespoons yellow mustard seeds
2 tablespoons black peppercorns

1 tablespoon dill seeds
1 1/2 teaspoons red pepper flakes

for each rub:.
combine all ingredients in a spice or coffee grinder until well ground.
rub on any type of steak 2 hours prior to grilling.
store extra rub in a container in a dry spot.

Anyway, anything spicy or peppery usually makes for a good rub; however, a goat cheese or blue cheese makes for a nice marinade…just dollip a little on top and eat. YUMMY
Salt and pepper. You want to taste the meat, not the spices. Save the complex flavors for the sauce.
Garlic, red pepper, onion pepper, thyme, 1 part veg oil, 2 parts vinegar, 1 tbs water.
This will sound like an easy answer, but pretty much ANY combination of dried herbs and spices that you like (whatever you have on hand) will make a fine rub for steak. Whatever you use , just be sure to include some salt, also. The only thing I might suggest leaving OUT of a rub made specifically for steaks would be sugar. That’s just because at high grilling temperatures sugar is likely to blacken and not taste too good. But if you like your steak that way, then go ahead and use it.
As for marinades (with the stuff you mentioned): do you mean marinades for steak, or for general purposes? For example, Italian dressing all by itself makes a great marinade for chicken. If you mix some oil and red wine (about 50/50), and add some salt, pepper and whatever herbs you like, you’ll have a good marinade for beef.
Since today is Cinco de Mayo, you might mix oil with lime juice (again, about 50/50), and add some herbs…you’ve got a Tex-Mex marinade.
Lime juice and olive oil would make a great southwestern-style marinade with crushed garlic, chopped cilantro, and a little cumin.
I also like one of the following combinations on my steaks:
garlic-infused olive oil, sea salt, and cracked black pepper, then serve with broccoli rabe and buttered orzo with fennel seed.
olive oil, crushed red pepper, and a little ground caraway seed for a twist on a steakhouse taste.
peanut oil, a teeny bit of sesame oil (it’s got a pretty low flash point, so only use a tiny bit or add it post-grill), black pepper, and soy sauce. brush on a mixture of siracha sauce and brown sugar after cooking for a great southeast-asian flavor.
Whisk together some Olive Oil, with Curry powder and Turmeric and pour over your steaks.
Turn with food tongs several times and marinade for 20-30 minutes.
Grill or fry to your degree of doneness.
I use McCormick’s Montreal Steak Seasoning on my steaks. If you want a marinade, the one we like best is Jack Daniels brand marinade. It’s sold on the same aisle as the BBQ sauce.
mix coarsely ground black pepper, coarse salt and a little vegetable oil to make a paste, dry the meat and rub paste into steak all over, cover at room temp for 30 mins to 1 hr. cook in dry, very hot heavy skillet until med rare. Remove steaks to a plate and cover loosely. Do not wipe out pan,
Use your red wine to deglaze the pan… off heat add 1/2 cup red wine then turnon heat again to med nd simmer stirring frequently until syrupy, then add salt, pepper to taste and off heat swirl in a pat of butter and you have a superstar sauce to compliment your steak.
