What are some great sides to go with lemon-pepper salmon?
I am making a birthday dinner for my boyfriend tonight, and so far I am making lemon-pepper salmon, and mushroom rice. I need one more side dish, and I’m having a hard time deciding. I live in a small town with a small grocery store, so I can’t get all of the fancy stuff like most people have in the big supermarkets, so keep that in mind. Thanks for any input!!

Sauteed spinach or steamed broccoli
You have your starchy side dish, so how about a vegetable, like steamed brocolli with a little lemon and butter.
last time I had lemon salmon, it went with yellow rice and sauteed spinach another good side is steam broccoli or zucchini squash and carrot mix.
I’d do steamed veggies. :] You can do them really easily either in a steamer, or in your frozen section there are bags of veggies that you just pop in the microwave, and then you can add butter or some kind of topping to those. :] Yumm!
HOT PINEAPPLE SIDE DISH
1 can crushed pineapple (20 oz.)
1 can water
2 eggs, beaten
1/2 c. sugar
3 tbsp. cornstarch
Mix all ingredients together sprinkle with cinnamon lightly and stir again. Bake 1 hour at 350 degrees.

Blanch and shock some asparigus spears and top with a hollandaise sauce.
boil water drop the spears in and blanch for about 3 min. Then drop them into a ice water bath to stop the cooking proccess. Now with the water left over use it as a double broiler and make the sauce (easier than it seams)
4 egg yolks
1 tablespoon freshly squeezed lemon juice
1/2 cup unsalted butter, melted (1 stick)
Pinch cayenne
Pinch salt
Vigorously whisk the egg yolks and lemon juice together in a stainless steel bowl and until the mixture is thickened and doubled in volume. Place the bowl over a saucepan containing barely simmering water (or use a double boiler,) the water should not touch the bottom of the bowl. Continue to whisk rapidly. Be careful not to let the eggs get too hot or they will scramble. Slowly drizzle in the melted butter and continue to whisk until the sauce is thickened and doubled in volume. Remove from heat, whisk in cayenne and salt. Cover and place in a warm spot until ready to use for the asperigus. If the sauce gets too thick, whisk in a few drops of warm water before serving
sauteed garlic green beans would work.
Cucumber salad:
Peeled chilled chopped or sliced cucumbers lightly salted with Kosher salt.
Sliced Green onions or chopped Walla Walla sweet onions.
Make a cold dressing as follows:
1/2 cup Mayonnaise
1/8 cup of White Vinegar
1 tsp white sugar
1 T of fresh ground Black pepper.
Finish the meal with some fresh pineapple grilled with some brown sugar and pineapple juice as a baste.
Alternative BBQ Salmon Recipe:
Lay the salmon fillet on foil.
Season with garlic and onion powder, seasoning salt and lemon pepper.
Slice oranges and lemons and onions into slices and rings respectively and put on the fillet. Place pats of unsalted butter on top and pour sherry wine over the top (Not cooking sherry as it has salt added to it and this will be too salty) Use some wood smoke on the BBQ like applewood. When the fish is done, throw away the veggies and fruits but retain the butter/wine sauce for the fish.
