What broth can be substituted in French onion soup?



I am trying to make a vegetaian version of French onion soup? Any suggestions on what to use besides beef broth that will have generally the same taste?

you can use vegetable broth, your flavor will be there, but the deep dark carmelized color will not.

You can try using vegetable stock with soy sauce mixed in.

You could use vegetable stock or broth. The flavor won’t be as “deep” as if you had used beef broth. Just make sure you carmalize the onions very well. That should help deepen the flavor.

A vegetable broth/boullion. Of course, you can just use a whole chopped onion with the outer “paper” to color it.

*****You can make your own vegetable broth; if you use roasted vegetables the broth will be even richer.
Try roasting and onion, potato, a couple of carrots, bell pepper, a turnip and several cloves of garlic, after they have roasted to a nice golden brown then put them in a pot of water with a bay leaf, salt and pepper. This will give you a good vegetable broth for any soup or Gravy.

It will not be as good as the beef broth but it will taste just fine.

I can’t imagine you would destroy such a fine dish..
there is a vegetarian section that knows how to desecrate food.
just blacken the onions and use water..
how boring..
