Boil your pasta.
While your pasta is boiling take a medium sized frying pan and put around 1 to 2 tablespoons of oil – olive oil preferably and put it on th stove top at medium heat. Crush the garlic with a garlic press, or chop it finely and add it to the heated pan. Slice the zucchini and mushrooms into thin slices. Also dice the onion into small pieces. Cut the capsicum into long thin strips. Add all of the veggies to oil and garlic. Add salt and pepper to taste and a pinch or two of basil or any other spices that you so desire. Cook until the veggies are soft.
When the pasta is finished cooking, drain it and put it in a serving bowl. Stir in some olive oil, just enough to coat the pasta. Stir garlic powder with the pasta as well and diced leek and diced tomatoes. Add some parsley and basil. And if the cheese that you have is parmesan add that in as well.

Use all your vegetables, Cut them into small cubes. Slice the onions (that mean the leek too) finely add crushed garlic and saute them in little oil in a large pot till they get transparent. As they saute, add some spices like paprika, pepper and cumin, and let the onions sweat. Add the rest of the vegetables and stir well, cover with vegetable stock or just water, bring to the boil add tomato paste, and let simmer. Add salt when some of the liquid evaporated.
To make it more nutritious and add some proteins, break the eggs into the mix carefully and let it poach the eggs till the yoke just starting to harden. serve immediately with a fresh crusty bread.
