What does this mean in my recipe?



There is a line in the ingredients that says “4 large garlic cloves, bruised and cut in half.” I don’t understand what the bruised part indicates.

bruised means to smash them with the side of your knife
it releases all the flavor and oils then cut the piece in half

I rarely “bruise” my garlic… I ‘SMASH’ it. This releases the flavor you are after. All chefs will smash, or bruise the garlic before adding to a dish. After you smash it, it is much easier to remove the papery skin also. Then I dice it up and throw it in.

put one clove at a time on the cutting board and lay a chef’s knife across it and smack it. that’s bruised.

Brused, rather than smashed means “not too hard”, so you don’t destroy it, and you can cut it in half.

Leave the garlic out of the recipe!! bruised means to hit it with the meat hammer or mash it with the blade of the butcher knife.

Go get a good cookbook like “Better Homes and Gardens” It is a bit on the expensive side, but has sections in it that explain all these terms for cooking.
