What in the world is “bleached celery”?
I just saw a recipe using bleached celery. Never heard of that, what is it????

Just a variety of celery. There is also white celery.
No! It isn’t a variety of celery!! You bleach celery in the garden when it is growing by keeping the soil pushed up against the celery heart as it gets taller, just leaving the leaves and top most part out of the ground or soil. That is why celery has so much dirt in the stalks. The better job one does of keeping the soil pushed up around the celery heart the lighter the color of the celery.
