Peppermint Crunch Bark Recipe #53663
Here’s a Christmas treat thats great year around if you like peppermint!

17 ounces good quality white chocolate, finely chopped
30 red and white hard peppermint candies, coarsely crushed
7 ounces bittersweet chocolate or semisweet chocolate, chopped
6 tablespoons whipping cream
3/4 teaspoon peppermint extract
Turn a large baking sheet bottom side up, cover with foil and mark out a 12×9 inch rectangle on foil.
Stir white chocolate in a double broiler or a metal bowl set over saucepan of barely simmering water until chocolate is melted and smooth and candy thermometer registers 110 degrees.
Remove from over water.
Pour 2/3 cup onto rectangle on foil.
Using a icing spatula, spread chocolate to fill rectangle.
Sprinkle with 1/4 cup crushed peppermints.
Chill until set, around 15 minutes.
Stir bittersweet chocolate, cream and peppermint extract in a heavy medium saucepan over medium low heat until just melted.
Cool to barely lukewarm.
Pour bittersweet chocolate onto cooled white chocolate and spread with the icing spatula.
Chill for 25 minutes.
Rewarm remaining white chocolate and working quickly pour white chocolate over firm bittersweet chocolate.
Spread and sprinkle with remaining crushed mints.
Chill for another 25 minutes.
Carefully lift foil off of pan.
Cut bark crosswise into 2 inch wide strips.
Now remove foil on bottom.
Cut each strip into 3 sections, and cut those crosswise.
Wrap and refrigerate or serve.

PEPPERMINT BARK OR OREO COOKIE BARK
Pink or green summer coating
6 drops peppermint oil to 1 lb. candy
Peppermint Crunch
Oreo cookies (optional)
Stir peppermint crunch into melted coating with peppermint oil added, until well covered. Spread on wax paper. Break up when set. Pink or green mint candy is also nice with broken Oreo cookies stirred in.
Holiday Peppermint Bark
1 (12-ounce) package NESTLÉ® TOLL HOUSE® Premier White Morsels
24 hard peppermint candies, unwrapped
Line baking sheet with waxed paper.
Microwave morsels in medium, microwave-safe bowl on MEDIUM-HIGH (70%) power for 1 minute; stir. Microwave at additional 10 to 20-second intervals, stirring until smooth.
Place peppermint candies in heavy-duty plastic bag. Crush candies using rolling pin or other heavy object.
While holding strainer over melted morsels, pour crushed candy into strainer. Shake to release all small candy pieces; reserve larger candy pieces. Stir morsel-peppermint mixture.
Spread mixture to desired thickness on prepared baking sheet. Sprinkle with reserved candy pieces; press in lightly. Let stand for about 1 hour or until firm. Break into pieces. Store in airtight container at room temperature.
Makes 1 pound.
GERMAN ALMOND BARK – PEPPERMINT CANDY
2 lbs. white almond bark
1 1/2 c. crushed peppermint candy
Melt white almond bark on top of double boiler (never add water as it curdles the white almond bark). It takes about 10 minutes to melt thoroughly and will be very thick. Crush either peppermint candy canes or peppermint hard candy in blender until it is powder. Meanwhile, line a cookie sheet with tin foil. Mix hard crushed candy with melted white almond bark. Spread on lined cookie sheet. Let it dry and chop into pieces.
