A friend of mine was eating something with mustard and it spilled on my car seat.

Assuming the mustard didn’t bleach the leather, which is a possibility (if the color isn’t there, you can’t “remove” the “stain”), a paste of Oxy-Clean and hot water. Let it soak for a few minutes. Then “wash” with hot Oxy-clean solution on a cloth until it’s gone. Keep renewing, so the cloth stays hot. (Test on a small spot under the seat first, to make sure that the hot Oxy-Clean solution doesn’t remove the dye in the leather.)
use WD-40, that’s oil base so it won’t hurt the leather.
