What is the effect of vinegar on active ingredient of garlic ( Allicin ) and does soaking garlic cloves?
in vinegar destroy allicin like cooking or not and if i soaked garlic cloves in vinegar for 5 – 10 days. Is there is any effect on allicin or not?

I am not certain, however, let’s look at this logically. Vinegar, especially the Apple Cider variety, is a preservative, it also alters acid and changes it to alkaline. Since an alkaline base does not destroy but builds, I would logically imagine that it would preserve the natural Allicin in garlic, not destroy it. This would make for a very interesting experiment.
