The ones you use the most. And then ones you use every once in a while but there is no reason to go out and buy a bunch of stuff you will never use and will just be a waste of your money trust me. It all really depends on how much cooking and baking you do. then you can always add to your collection as you try new recipes.
Salt, pepper, oregano, garlic, onion and curry powders, cumin, cinnamon, allspice and paprika.
What spices / flavours do you like?
Ginger; nutmeg; allspice; clove; juniper; star anise; paprika
Do you want herbs as well?
Dill; Bay; Rosemary; Sage; Basil; Thyme; Parsley;
try oregano, sweet paprika, garlic, mixed herbs, parsley
dry stuff:
regular salt and pepper
sea salt or kosher salt
lawry’s seasoning salt
grill seasoning
poultry seasoning
cinnamon
pumpkin pie spice
bay leaves
celery salt
chili powder
cream of tartar
dill
nutmeg
oregano
lemon pepper
rosemary
sage
tarragon
wet or fresh stuff (not really spices but kitchen basics)
real vanilla
almond extract
food coloring
basil
parsley
garlic
onions
As somebody already said here, no need to go and buy spices just to fill the jars. Wait till you’re more confident in the kitchen and start buying as you need them.
Still, I can recommend you buy good sea salt and black pepper as your essentials, but you won’t have those in a spice rack, obviously. Avoid the supermarket spice rack, where a tiny jar will cost you over a pound and buy from a Ethnic food shop, where you’ll be able to buy loads for less than a pound and it’ll be fresher.
Essential Spices
Whole Black Pepper Corns
Whole White Pepper Corns
Bay Leaf
Cyanne Pepper
Chilli Powder
Star Anis
Clove
Juniper Berries
Kosher or Sea Salt
You can add other stuff as well, I tend to stay away from dried herbs like oregano and basil, because it loses its potency very quickly. Keep fresh herbs and adjust your spices accordingly.
Sazon, adobo, oregano, chili, garlic, onion, paprika, Cajun seasoning
