I usually boil rice for 10 to 12 minutes. Whens the best time to add a powdered spice blend for rice? (once a pack of spice mixes is opened, how long can I store it in an air tight jar?)

Add spice after the rice is boiled.
Spices typically never expire but you should still replace them once in every 2 years…
Add the mix with the rice into the boiling water since these spices are dried and need to soak up water in order to give a good flavour.
i suggest doing this… its like making a rice pilaf, but the thing is, you don’t have to saute onions… add a bit of oil
in your pan, then add your rice, then add your powdered spice, make sure to evenly coat all of the rice, then that is the time to add your water and leave it to simmer until it is cooked.

When the water starts boiling
immediately when boiling the rice….to allow the spices to mix with the rice and reach a deeper color. If you add the spices afterwards, you may have stronger spice flavor but it shows that it did not have time to intertwine with the mixture. Possibly right in the middle would be best…boil the rice for just 5 minutes but then put in the spices so they still have time to mix with the rice and yet you still can have a strong spice taste.
have you tried stir frying it into the rice b4 boiling. the rice would turn out more fragrant.
I usually make basmati rice…
1. place a small amount of olive oil in the pan or pot… spices I throw into the oil before I add the rice…
2. add the rice and stir it in the oil until the “nutty” smell develops [don't brown or burn the rice]
3. add water and bouillon powder or cubes or salt at this time.
4. bring the rice to a boil uncovered for a few minutes [5 minutes will do]
5. turn down the heat to simmer, cover and walk away…
come back in 20 minutes and you should have perfect rice.
