Who’s your favorite chef for using spices, herbs and bringing out flavors in foods?
I miss the “Naked (British) Chef, even tho I couldn’t understand him half the time. He always used a mortar/pestle to grind seeds, spices, etc., by hand. He really got me titilated about flavoring foods.

My Mom. She grows a bunch of spices and herbs in her backyard (in India) and grinds and roasts them and makes really yummy stuff.

It’s hard to say. There are chefs that I enjoy watching, but I can’t say that I’d like their food without tasting it.
Me! I have more spices than anyone in this neighborhood and know how to use ‘em. I buy them by the ounce from Penzey’s – far superior to the stale stuff at the local grocer.
