Why is there such a short expiration date on herbs?
This cumin powder I have suposedly spoils early 2011, pepper grains spoil in two years-ish as well.
I thought dried herbs could last decades?
What about salt, if kept dry, couldn’t I keep that for years?

They don’t “spoil” per se, they get stale and lose their essence. If you want the best, strongest and freshest taste from your herbs you should use them within 2 years of opening the containers.
READ the label or call the company or email them. Any of these questions can be best answered that way. 2011 is still a ways away. My cumin is used within 6 months since I do like to cook.
Because all herbs contain a certain amount of natural oils and oils will go rancid and change the flavor of your herbs/spices when not used or exposed to air.
BTW, salt is not an herb it’s a mineral and will not spoil. Dried herbs have much longer shelf lives than fresh.
